Domaine De La Métairie D’Alon ‘Le Palajo’ Organic Chardonnay 2019, Limoux

The stunning Haute Vallée de l’Aude in the Languedoc is home to some of France’s highest vineyards. You’ll find Domaine de la Métairie d’Alon here. It’s run by Burgundy native, Laurent Delaunay – a firm Majestic-favourite producer. For the past 30 years, he’s been crafting elegant terroir-driven Chardonnay and Pinot Noir reminiscent of his homeland. Le Palajo is his flagship Languedoc white wine. Hand-selected grapes undergo a careful pressing process, where only the best juice is preserved. It’s then transferred to varying types of barrel – new and old – in order to develop complex flavours and textures. Expect notes of blossom, apricot, fresh pastry and cream. Flavours of lemon zest, candied chestnut and spice will complement soft, creamy cheeses.
