The best Albariño comes from Rías Baixas on the lush Galician coastline – so that’s where we went to make the Definition. With misty hills, a wild green coast and bracing winds, the region feels closer to Ireland than Spain. While it may put off sun-bathers, these conditions are perfect for producing fresh, zesty whites. And this is made by one of the region’s finest producers, Martín Códax. It’s typical of its coastal location, with crisp apricot and citrus notes, and a distinctive sea-spray minerality. Enjoy with fresh white fish.
